当年意大利着名旅行家马可波罗在中国旅行时 喜欢吃一种北方流行的葱油馅饼 。回到意大利后他一直想能够再次品尝,但却不会烤制 。一个星期天,他同朋友们在家中聚会 , 其中一位是来自那不勒斯的厨师,马可波罗灵机一动,把那位厨师叫到身边,“如此这般”地描绘起中国北方的香葱馅饼来 。那位厨师也兴致勃勃地按马可波罗所描绘的方法制作起来 。但忙了半天,仍无法将馅料放入面团中 。此时已快下午两点,大家已饥肠辘辘 。于是马可?波罗提议就将馅料放在面饼上吃 。大家吃后 , 都叫“好” 。这位厨师回到那不勒斯后又做了几次,并配上了那不勒斯的乳酪和作料,不料大受食客们的欢迎,从此“披萨”就流传开了 。

比萨起源于 3000 年前 , 人们在烧热的石头上做成扁平的小圆面包或馅饼 。那种放在锡板上食用的圆面包或馅饼就是批萨,它是人类历史上第一种非发酵面包 。在埃及人发现了酵母后, 人们才开始制作发酵面包 。‘比萨' 这个名字 来自拉丁语‘ pinsa ',它是拉丁语‘ pinsere '的过去分词,意思是‘压平' 。地中海地区 ,如埃及、希腊和罗马人,习惯吃用大麦、 水和不同调料做成的小圆面包或馅饼 。当然 可以认为这些小圆面包或馅饼就是比萨的‘前身' 。

The Greeks called this early pizza plankuntos and it was basically used as an edible plate when eating stews or thick broth. It was not yet what we would call pizza today but it was very much like modern focaccia. These early pizzas were eaten from Rome to Egypt to Babylon and were praised by the ancient historians Herodotus and Cato the Elder. The word "pizza" is thought to have e from the Latin word pinsa, meaning flatbread (although there is much debate about the origin of the word).
